Farlo riposare per circa 60 minuti in temperatura di circa 18/20° e coprire.</span></span></p>

Appoggiarla sulla teglia di rame precedentemente oliata. Quindi deporre sulla sfoglia la crescenza in piccoli pezzi (circa una noce per ciascun pezzo) in senso circolare. </span></span></p>

Chiudere le estremità delle due sfoglie in modo che i bordi sovrapposti risultino ben saldati ed eliminare la quantità di sfoglie (sopra e sotto) che fuoriescono della teglia. </span></span></p>

Stendetevi la pasta frolla tenendo i bordi alti e possibilmente sottili. Cuocete la crostata in forno a 180° per 20 minuti. Fatela raffreddare e toglietela dalla tortiera.</span></span></p>
<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;"> </span></span></p>
<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;">2 Spennellate la base della crostata con il cioccolato bianco fuso e coprite successivamente con i lamponi freschi.</span></span></p>
<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;"> </span></span></p>
<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;">3 Frullate i lamponi per la gelatina con lo zucchero, passate il ricavato al colino cinese. Scaldate una parte della salsa, stemperatevi la colla di pesce fatta precedentemente ammollare in acqua fredda, quindi unitevi anche la salsa fredda. Stemperate e tenete a temperatura ambiente.</span></span></p>

<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;">4 Per la crema fate bollire il latte con la vaniglia tagliata per il senso della lunghezza. Sbattete con una frusta i tuorli con lo zucchero, versate il latte bollente nella bacinella con le uova, quindi mettete nuovamente sul fuoco e fatela legare. Passate la crema al colino cinese e versatela in un contenitore freddo, aggiungete la colla di pesce precedentemente ammollata in acqua fredda e strizzata. Stemperate<span>  </span>bene e lasciate raffreddare. Unite quindi la panna montata e amalgamate per bene.</span></span></p>

Riponete la torta in frigo per 30 minuti circa. Copritela con la gelatina di lamponi semi-liquida.</span></span></p>

Scaldate un cucchiaio di olio in una casseruola e unite rosmarino, l’aglio in camicia. Dopo averli lasciati appassire per circa 5 min, aggiungete di ceci sgocciolati fatti insaporire 2-3 min, quindi copriteli con abbondante acqua e proseguita la cottura per 2 h e mezzo o fino a quando saranno teneri, lasciandoli sobbollire a fuoco basso, quando mancano 10 min. al termine della cottura salateli, quindi scolateli ed eliminate l’aglio e il rosmarino.</span></p>

<p class="MsoNormal" style="text-align:justify;margin:0;"><span style="font-size:12pt;"><span style="font-family:Times New Roman;">2 mondate e lavate le coste di sedano, la cipolla e il finocchio, quindi affettateli finemente, mondate anche il prezzemolo staccando le foglie, asciugatelo e tritatelo con un coltello, quindi spezzettate l’erba cipollina.</span></span></p>

Raccogliete sedano,<span>  </span>cipolla,<span>  </span>finocchio e ceci in una insalatiera, profumate con l’erba cipollina e il prezzemolo e condite con la vinaigrette ottenuta.</span></span></p>
